Capricho de Cabra with Herbs
Capricho de Cabra is a creamy, flavorful cheese produced with milk from Murciana goats, which produce milk high in fat and protein to give the cheese its amazing creaminess. Rolled in Spanish herbs, this is a lovely cheese for salads or a tapas platter. Murcia goats are valued for producing a mild, sweet milk, with less of the "bite" found in other goat's milk. Capricho de Cabra is a rindless, fresh cheese, like a Spanish version of French chevre, but the cheese is denser, even sliceable. On the palate expect a burst of citrus flavor with a sweet and salty finish. Capricho de Cabra can be used in any application you'd use chevre, from beet salad to caramelized onion tarts to tossed with herbs and olive oil.
Made from pasteurized goat's milk.
