Le Wavreumont is the fruit of a region of Belgian pastureland that produces some of the best milk available. This combination results in a humble-looking cheese of exceptional quality and pronounced flavor. Le Wavreumont is produced from high quality unpasteurized organic milk. Made in five pound wheels, its natural rind gives it a sandy appearance and burnished tan color typical of monastic cheeses. Once you slice into the cheese, the color of the paste cheese varies with the seasons - pale in winter and an orangey/yellow color in spring when the cows return to the lush pastures of the Ardennes. It has a fresh flavor on the palate and its nutty aftertaste will delight connoisseurs.
