This cheese is the byproduct of two traditional farmhouse activities: turning excess milk into cheese and fermenting grapes into wine for the home. Red Wine Farmer Cheese by Affineur Walo is a typical Swiss semi-hard cheese, similar to Gruyere or Appenzeller. It has a firm, sliceable body that is coated in a natural, pebbly rind. This cheese is selected by Affineur Walo from different dairies in the eastern part of Switzerland and matured to perfection. The maturation for 10 months with repeated washing of red wine help to develop the rind and produce an aromatic and slightly pungent aroma. The cheese takes on a growing sharpness with aging, which is reinforced by the tannins from the wine. Savory and slightly fruity, this is the perfect cheese to enjoy with family and friends over a bottle of local wine. Or try it melted over a gratin or bowl of soup, as you would Gruyere.
