Ubriaco al Prosecco by Luigi Guffanti
Nestled in the hills of eastern Veneto is one of the most wonderful, little-known wine growing regions in the world. Veneto is home to the Prosecco grape, a variety that is used to make white wines in different styles, sparkling or still. This exquisite cheese, also from Veneto, is coated with the Prosecco must (the grape skins that are the by product of the wine making process). The Prosecco gives the cheese intense and delicate scents and a fragrant, fresh flavor. This Ubriaco variety is an ideal cheese to serve with wine-- either before, during, or after dinner. Naturally, it pairs perfectly with a good Prosecco wine from the hills of Valdobbiadene.
Made from unpasteurized cow's milk.
