A firm, pressed cheese rolled in paprika. This cheese is slightly milder than Cotija and can be easily shredded or grated. Commonly used as a topping or stuffing for enchiladas, burritos, and tacos, Anejo Enchilado has a piquant flavor and a crumbly texture.
