Gidotyri by Epiros
Gidotyri is a traditional Greek cheese not widely known to Americans. Made using milk from the free roaming goats of the region of Epirus, a region in Northwestern Greece known for its unspoiled terrain, Gidotyri is a goat cheese made in the feta style. The texture is slightly dry and crumbly, with a subtle goat milk flavor and a hint of salt and citrus. Drizzle with olive oil, perhaps some black pepper, and plenty of fresh vegetables and flatbread.- Made from pasteurized goat's milk.
