Genuine Lancashire is a rare find nowadays. In 1939, there were 202 farms making Lancashire. Unfortunately, during the war and rationing, all milk was to be used only for the mass production of cheese. Today, there are only three farms making true Lancashire - all within the Preston area. This wonderful example comes from Singleton's Dairy. The difference between creamy Lancashire and the crumbly variety should be obvious by the name alone. A wonderfully creamy texture with a clean zingy freshness that wakens up your taste buds and builds to a crescendo of full Lancashire flavor. A very special Award Winning Lancashire cheese! It all started 4 generations ago, on Beacon Fell, when Duillia Singleton made award winning cheese on the family farm. Today Grandma Singleton’s great grand-daughter, Tilly Carefoot, continues the family tradition, making cheese to the recipes Duillia used all those years ago.
