This monovarietal oil from Oleum Sabinae is obtained by the pressing of a single type of olive: the "Frantoio". This cultivar is quite common all around Italy but takes on different characteristics depending on the production zone and the gathering period. Oleum Sabinae creates a fresh, fragrant and delicate Frantoio EVOO, working for years on perfecting its Goldilocks position between too mild and too strong. If anything, it leans to the delicate side and therefore pairs well with foods with delicate flavors such as fish, chicken, pork and salads.

The production of the Frantoio cultivar is quite demanding. The Frantoio olive tree is very delicate and sensitive to cold temperatures that slow its growth. The gathering can be carried out with olive picking machines, but it requires great attention as they could easily break the branches. The bark is always at risk of damage as well, stunting the growth of new wood and creating weak spots that fungi and insects can easily attack.
