Buenalba with Rosemary is an eye-catching cheese from Castilla Vieja, Leon. This unpasteurized sheep's milk cheese is a must-try for fans of Malagon with Rosemary and Rosy Goat. What sets Buenalba apart is the cheesemakers' inventive step to infuse the rosemary throughout the paste of the cheese, along with a thick coating on the rind. This gives each slice of Buenalba a deep, resinous rosemary flavor and captivating aroma. The La Prudenciana Estate in located in Tembleque, in the geographic centre of the Iberian Peninsula. Using their own milk from rotating herds, La Prudenciana has made a name for themselves, both for authentic recipes and innovative techniques that allow themselves to put their own stamp on Spanish cheesemaking traditions.
