Fig and Fennel Paste
The honeyed flavour of figs, picked at their peak of ripeness, is beautifully lifted with the freshness of fennel, making this paste a perfect match with a clothbound cheddar or Parmigiano Reggiano, or for a soft cheese option it is also wonderful with a fresh goat's cheese. For any paste left over from the cheese plate, try adding it a ravioli filling of fresh ricotta, or melt with a little verjuice and use as a glaze to brush onto the scored fat of a leg of ham before baking for 30 minutes.
