From high mountain pastures comes the aptly named SwissArt. A semi-hard cheese with a firm, smooth texture similar to Gruyere or Le Marechal,SwissArt is made in the Canton of Graubrunden. After the 12-pound wheels are taken from the molds, each one is coated with several handfuls of local herbs gathered from the countryside. These herbs infuse their flavors into the cheese, echoing the flavor of the wild herbs and grasses eaten by the cows before milking. Careful aging and washing of the wheels with a brine help to enhance the cheese's robust flavor, also giving it a characteristic smell. SwissArt is a delicious cheese perfect for a refined cheese board, especially when paired with crisp young white wines. Just like Gruyere, it melts well, making it perfect for boosting the flavor of fondue, cheese sauces, gratins, or a simple cheese toastie.
