Castelinhos is produced over 900 miles off the coast of Portugal, on the volcanic island of Terceira in the Azores. Named after a castle in the town of Fiera, Castelinhos' recipe has remained the same for the past century. Unlike Sao Jorge or Azores Flores, Castelinhos is a smooth, soft cheese, similar to Saint Paulin or Port Salut. It is aged for only 30 days, which preserves its fresh, fruity, and delicate flavor. During this aging period, each diminutive 2.5 lb wheel received regular washing with brine to help develop the rind. This supple cheese is delicious served on warm bread, allowing the supple paste of the cheese to warm and melt slightly.
