Queso Panela by Queso Del Valle
Queso Panela is a classic queso ranchero, meaning that it's a simple fresh cheese often made in the home. Sometimes called basket cheese, or queso de canasta, this cheese is just fresh cow's milk curd drained overnight in a wicker basket. Although today the baskets are made of easy-to-clean plastic or metal, demade for this cheese in traditional recipes makes it a staple in many Mexican kitchens. It can be simply enjoyed with some herbs and lime juice as a spread, or used to enrich sauces, stuffings and casseroles. But try crumbling a bit on top of a taco, salad, or bowl of chili for a simple, classic snack.
