Castell de Morella
Castell de Morella is aged for a month in natural caves in the valley of Cati (near Valencia). Made from organic pasteurized goat's milk. Although the natural, rustic rind is mottled with fuzzy grey mold, the flavor is a nutty, sweet goat milk with a light aroma of mushrooms. With a smooth texture similar to a young Manchego, Castell de Morella is easy to slice and serve with crusty bread or a salad. This cheese pairs well with sparkling Cava and crisp fruit. It is characterized by its unique pyramid like shape and a white interior. Plus, this cheese was nominated for the 2011 Sofi Award Silver Finalist: Outstanding Cheese. This is a great cheese for fans of other rustic Spanish gems like Garrotxa, Roncal, or Monte Enebro.
