Servilleta is a rustic, semi-soft cheese, made according to traditional and artisan methods. Servilleta means "handkerchief" in Spanish. In the process, the cheese maker folds the curd in the handkerchief and ties the four corners together in the center of the cheese, hence its unique shape. The leathery, rustic exterior of this small, hand-made cheese hides a stunning, silky-white, semi-hard interior. This is a delicate and elegant goat cheese. Not too "goaty", Servilleta has a rich, creamy paste that's still firm enough to be sliceable. This is a lovely cheese to serve with fresh fruit, iberico ham, and olive oil bread.
