MontCabrer is a semi-firm goat's milk cheese from Catalonia, bathed in vegetable oil and charcoal, and aged 60-90 days. The rind is gray, as surface mold mingles with the charcoal. Josep, of Nevat fame, modeled this cheese on an age-old tradition of cheesemaking in the region. The texture is creamy, and the sweetness of the milk derives from the Murciana goats. The cheese is earthy, full-flavored, and slightly tangy at the finish. Serve with crusty bread, white Spanish anchovies, and plenty of good Rioja.
