Carob Honey is dark amber in color and crystallizes easily due to a high glucose content. This delicious honey has a warm flavor with chocolate and herbal hints and a slightly bitter aftertaste. Most people think of carob as a secondary, less appealing alternative to chocolate. But when it comes to honey, carob trumps chocolate. The cacao tree, the source of chocolate, does not have nectar-producing flowers, leaving carob as the lone natural source of a chocolate-scented honey. Since this is a natural, raw honey, it will crystallize over time or at cooler temperatures. To return this honey to a liquid state, simply heat the jar in warm water, stirring to smooth the texture.
