Saxon Creamery is based in the heart of Wisconsin, America's original cheese country. In a sea of large producers, Saxon remains small and artisanal, a family-owned farm where the late founder Ed Klessig referred to his pastures as his cow's "salad bar." Today, son Karl Klessig continues the family tradition of rotational grazing and sustainable farming.
Please Note: Pastures is aged with a natural cloth rind, which can cause a slight blue veining to appear. This is the same mold you find in blue cheeses, which many connoissuers gladly eat, but it can also be cut off if this is not your preference.
