Wild Lavender Honey from Morocco
Produced high within the middle Atlas mountain range in Morocco, rare and unique wild lavender honey is an exotic culinary treasure. This dark honey ranges in color from amber to deep mahogany. On the palate it tastes of citrus, oak, burnt sugar, and red grapes, ending with a woodsy sweetness and hints of rosemary and caramel. Creamy and slightly crystalline, this honey is a delight on warm bread with goat cheese, or blended into a milkshake of tangy yoghurt and sweet dates. Since this is a natural, raw honey, it will crystallize over time or at cooler temperatures. To return this honey to a liquid state, simply heat the jar in warm water, stirring to smooth the texture.
