Like true Reblochon, Dancing Fern is made from raw (unpasteurized) milk and aged about 60 days. Even with the two-month aging period, it displays none of the sharpness or firmness one might associate with an aged cheese. Also like Reblochon, the cheese oozes out from beneath its rind as soon as you cut into it, even before it reaches room temperature. Utterly complex, we note hints of fresh cut grass, mushroom, broccoli, and asparagus on the palate.
