Extra Aged Edam - 2 lb Ball
Holland is particularly famous for two cheese, Gouda and Edam. Although aged Gouda is available in a number of forms, aged Edam is much harder to come by. So it is with great pleasure that we are able to offer you this 16 month-aged Edam from Noord Wester. Although Edam is normally thought of as a soft, young springy cheese, this aged version is quite a different item. Weighing in at only 2.2 lbs (1kg), this cheese has a huge amount of surface area, which makes it age rapidly, especially compared to an 80 lb wheel of Gruyere or Parmigiano Reggiano that also might be aged 16 months. As the aging process continues and the cheese loses moisture and becomes drier, the Edam loses its classic sphere shape. At the end of the aging period, it looks like a slightly deflated beach ball. The depressions, or dimples, are actually helpful, as they provide a solid base to keep the cheese in place as you cut through the hard rind and core. This cheese should be shaved paper thin, like an extra aged mimolette, sbrinz, or boerenkaas.
