Swiss Raclette by Rolf Beeler
Swiss Raclette is a traditional cold weather treat, and when you really want to treat yourself, look no further than the expertly aged cheeses of Rolf Beeler. This 15 lb wheel is made by Molkerei Seiler, in Sarnen, Switzerland. Typically mild when young, this cheese becomes aromatic and robustly flavored when aged for another three months in Rolf’s affinage room. Just like his world famous Gruyere, Rolf ages this raclette in an old army bunker tunnel by Giswil. A remnant of the Cold War, this is now home to some of the most exquisite and rare cheeses in the world. This pungent and powerful Raclette is perfect for melting and scraping over potatoes, bread, and washed down with Pinot Blanc or Riesling.
Made from pasteurized cow's milk.
