Cabra Raiano by Casa Lusa
Made by Casa Lusa in the Alentejo region of Portugal, this small goat's milk cheese is made from milk collected from local shepherds surrounding the cheese making facility. Smooth, with a creamy texture, this is not a crumbly goat cheese. It is almost spreadable at room temperature. The rind is slightly rough, with an occasional smattering of mold blooms, the result of naturally aging this cheese. Delicate, with a slight bite but smooth, herbal, slightly salty finish, this cheese is the perfect way to open the meal spread on fresh bread, or served alongside a green salad and glass of white wine.
Made from pasteurized goat's milk.
