This smooth Gouda has the creamy, silken taste you look for in a Gouda, but with a gentle bite of blue. After the rennet is added to the milk, the curd is inoculated with
, which gives the Gouda it's blue mold veining. The cheese is then repeatedly pierced with a stainless steel spike to allow air to help the mold bloom. After aging a few weeks longer, the cheese is waxed, sealing in the moisture and keeping a buttery texture. This Blue Gouda has a firm, sliceable texture, making it perfect for sandwiches, party trays, or crumbling over salads and boiled potatoes.
Made from pasteurized goat's milk.
