The perfect macaron (or "macaroon") isn't so much a confection as it is a balancing act. A light-as-air exterior pair of delicate cookies sandwiches a vibrant and intense center of cream or fruit puree. The first taste should be light and nuanced, with the center bringing a sudden explosion of concentrated flavor to the palate.
