Austrian Chorherrenkase
This dome-shaped cheese has a cross-shape pressed into the top -- chorherr means "canons" -- dipped in a white, inedible rind. Semi-firm and springy, with many tiny eyes, it is made of a combination of fresh milk and buttermilk. The buttermilk gives this mild, milky, pleasant cheese a refreshing lactic finish to round out its blossoming of robust floral-fruitiness. It has nice herbal notes, and makes for a lovely table cheese that evokes some of the milder Trappist cheeses of yore. This cheese is also sold under the name "Amadeus" in some markets and countries.
