This dome-shaped cheese has a cross-shape pressed into the top --
means "canons" -- dipped in a white, inedible rind. Semi-firm and springy, with many tiny eyes, it is made of a combination of fresh milk and buttermilk. The buttermilk gives this mild, milky, pleasant cheese a refreshing lactic finish to round out its blossoming of robust floral-fruitiness. It has nice herbal notes, and makes for a lovely table cheese that evokes some of the milder Trappist cheeses of yore. This cheese is also sold under the name "Amadeus" in some markets and countries.
Made from pasteurized cow's milk.
