1 Medium onion, sliced
1 cup of milk
6 sundried tomatoes, steamed and chopped
Preheat oven to 400 degrees F.
6 oz. ham, cubed
6 oz. Comté cheese, grated
8 pieces asparagus, steamed until tender
salt,pepper,nutmeg to taste
With a fork, beat the eggs with the milk. Mix in the sundried tomatoes, onion and seasonings. The add ham and cheese and mix well.
Heat olive oil in an oven-proof skillet on top of the stove, pour egg mixture, and cook over medium heat for a few minutes. Arrange asparagus on top. Place in oven and let cook until puffed (about 10 to 20 minutes).
