1/2 cup fresh or frozen shelled fava beans
2 tbsp Spanish olive oil
1 Spanish red onion. chopped very finely
1 slice medium-thick Serrano ham or prosciutto, chopped
finely chopped fresh parsley, to taste
salt and pepper
French bread, for serving
Bring a large pan of salted water to a boil. Add the beans and continue to boil for 5-10 minutes until just tender. Drain and put in a bowl of cold water to stop further cooking. Unless the beans are young and tiny, peel off the outer skins.
Meanwhile, heat 1 tablespoon of the oil in a skillet over medium-high heat. Add the onion and cook fot about 5 minutes until soft, but not brown. Add the beans.
Stir in the ham and parsley and check the seasoning; the meat is salty, so don't add salt until after tasting. Transfer to a serving bowl and drizzle with the remaining oil. Serve at room temperature with slices of French bread.
