Foie Gras, meaning "fat liver" in French, is the liver from a specially fattened duck or goose. A traditional French specialty, Foie Gras is an ancient delicacy that has been enjoyed since Egyptian times. Egyptians discovered that a goose would eat large amounts to prepare for migration, which resulted in enlarged livers stored with fat. The fatty livers from duck and goose soon became a prized luxury food reserved for emperors and nobility. Today, France is the largest producer and consumer of Foie Gras.

Foie Gras has a velvety, buttery and meaty flavor. Foie Gras is available raw in whole lobe form, or prepared as a bloc, mousse, pate, or terrine. A Foie Gras pate is finely chopped meat and fat that is shaped into a thick spread. Traditionally foie gras in bloc, mousse, pate or terrine forms are cooked then served cold.
