St. Stephen is a beautiful, hand-crafted triple cream that bursts with buttery and milky overtones. A smooth, silky interior made from all natural jersey cow’s milk and fresh jersey cream creates the perfect texture, while the soft, bloomy rind adds an earthy flavor with nutty undertones. St. Stephen will leave you wanting more to share with a friend and a glass of bubbly. This classic cheese works anytime of day – spread it on your toast for breakfast, serve it as an appetizer before dinner or dress it up with some honey or berries for a fancy dessert.

Four Fat Fowl are committed to making a locally-sourced product that they can be proud of. It seems only fitting that their name should be locally-sourced as well. The operation is based in Stephentown, a small town in Rensselaer County, NY. This area has a rich history going back to the colonial era. In the seventeenth century, the Dutch colonized the Hudson Valley and established a system of landholding called patroonship. The patroon was the landlord of a large piece of land on which lots of tenants settled. The last patroon of Rensselaerswyck (what is now Rensselaer County) was Stephen Van Rensselaer. Stephentown was named after him. His tenants called him the "Good Patroon" because he was lenient in collecting rent, which for tenants who had been there for seven years or more included "four fat fowl", a day's labor, and ten to twenty bushels of wheat per hundred acres. This fantastic history gave Four Fat Fowl the perfect name.

What’s the best way to store my cheese?
The best way to keep cheese fresh is to store it in the vegetable crisper in your fridge. Before doing so, wrap in parchment or wax paper, then wrap loosely in plastic wrap. You can also buy our exclusive cheese storage bags, specially created to keep your cheese fresher, longer.

Unless used for cooking, we don’t recommend storing cheese in the freezer as this will alter its texture.

What is the best temperature to serve my cheese?
Remove cheese from the fridge an hour before serving, as cheese is best experienced at room temperature to enjoy the full spectrum of flavors.

How long will my cheese stay fresh in the refrigerator?
The length of time cheeses last in the fridge after opening depends largely on the type of cheese. Soft varieties tend to spoil more quickly than hard varieties. Please refer to the table below for a convenient reference:

Our products are always shipped so they will arrive at your door in optimal condition! We’ve carefully selected packaging options that have minimal impact on the environment without compromising on food safety or quality. 

For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.
