Maple Smoked Cheddar is just one of the Grafton Village Cheese Company's excellent cheeses. It is bathed in the cool smoke from smoldering hard maple wood for four to six hours at the end of the aging period. What taste could be more typical of Vermont? The smoke is used to season, not to preserve. It adds a delicious nuance reminiscent of bacon, and is an excellent part of any breakfast menu (try it in an omelet!) and on cocktail trays. We were so impressed by its quality that we honored Maple Smoked Cheddar from Grafton Village as our July 2002 Cheese-of-the-Month.

Excellent nutty mild flavor
This is a delightful firm cheese to add to your mix. The smoke flavor is very mild with a distinct nuttiness that's quite delightful. Works great as a stand-alone cheese.

Grafton Village Maple Smoked Chedder
This is a wonderful example of what America can do with cheese. We had this paired with Pappy Van Winkle 20 year old. Arrived in excellent condition. NOT over smoked, well blended and you could still taste the cheese.

Pleasant but weak
After being spoiled by Five Mile Creamery's smoked cheddar for so long, the most balanced of the smoked cheddars I've ever had, which sadly I cannot find anywhere anymore... I have had to turn to lesser faire... this is a decent cheese, but not overly flavorful, I am still looking for a new smoked cheddar...

A great mellow smoke taste
I love this cheese. The light smoke taste with the smooth and creamy aftertaste is wonderful. It goes great with wine and a nice spicy salami, or summer sausage.

Very delightful
I would probably have given this cheese 4 slices, but gave it 5 to bring up the rating as it definitely deserves more than 2.5 and it was judged incorrectly by a couple of reviewers. First, this is "maple WOOD-SMOKED" cheese, so please don't expect any kind of "maple syrup" flavoring to this cheese as it's just not in this cheese--personally, maple syrup and cheddar cheese--yuck--and I love both. But, as a very good smoked white cheddar, this cheese will not disappoint. On first bite of just the cheese itself, this is a "hmmm" cheese--or not quite sure--then the foodie in me kicked in and I started getting ideas, very good ideas and this cheese really grows on you. This cheese will go great in most any recipe that will allow for a deep smoke cheese. While I generally use smoked gouda in my grits, this cheese works nicely as well. Smoked cheese & mac with bacon---mmmmmm! The possibilities are endless. For the simple snack--try a serving of generous slices on water crackers (or other neutral flavor base), microwave for 10-12 seconds; if you wish, place a pecan or meaty nut or slice of apple or pear in the center and enjoy! Also will go great on a cheese tray with other more mild cheddar, gouda, and/or havarti with some nuts and fruits such as apples, pears and grapes.

Pleasant Tasting - Not Outstanding
I wasn't completely disappointed, but like another reviewer I was expecting a bit more of the combination of Smoked Cheddar and Maple Syrup. It sounded delicious; flavors weren't as strong as I was hoping for. Not bad, but just OK.

Hoped for better
Did not get what I thought I would with this one.I like maple, and I love smoked foods - cheeses and otherwise! I expected to get a little of everything: smoke, cheddar, and maple. Any cheese that is new to me always gets a "naked" try - just a piece that I try all by itself - no crackers, bread, etc. I like to see how the cheese stands on its own. All I got from this seemed to be smoke! I detected a tiny bit of sweetness as an aftertaste, but absolutely NO cheddar flavor whatsoever. It was a disappointment, and I would never buy this one again. I will continue my quest for a delicious smoked cheddar!

Wow! As soon as I cut into this cheese, a wonderful aroma rose up to greet me. I paired it with the olive oil flatbread and a bit of honey mustard and it was heavenly. Smokey and full flavored, but not overpowering, it gets an A+ from me.
