This cheese comes to us from Emmi, master cheesemakers since 1782. They buy full 200 pound of Gruyere from the farming regions in the Canton of Fribourg, then age them in underground sandstone caves in their facility near Lucerne. Made from rich, unpasteurized, Alpine cow's milk, this Grand Gruyere Reserve has been aged for at least one year, compared with the average four to six months. A rustic, somewhat oily rind gives way to firm, smooth textured cheese which is slightly aromatic with a robust, assertive flavor. Wonderful served unadorned with some dark bread and figs, this is also a great melting cheese, and one that lends itself well to gratins, fondues and soups.

something new
this was my first ever taste of gruyere cheese, i can''t compare it to other gruyere cheeses. The cheese had a pleasant and noticeable flavor that i would call solid without being harsh or offputting....for newcomers I would put the flavor of this gruyere halfway between a bland flavorless american-made ''swiss'' cheese and a flavor intensive regiano parmiggiano from italy. It would be like an ultra mild true regiano cheese that you can use generously rather than as a shaved garnish. I like it....i intend to use more of it as a melted top cheese on reuben and beef sandwiches and if it holds up to make it my cheese of choice for daily use.

Lovely Gruyere
I was very pleased with this Gruyere.....a lovely. not too salty cheese, with a great taste.....will order it again. I eat it with a fresh baked hard crusted bread and fruit.....or just "nibblin'". Great taste!

Excellant,delivered on time and in good condition. Very rich and smooth flavor, I could eat the whole pound in one setting it is so good. But I savor the moment with small portions.

The best
Never tried this cave aged before and it's fabulous so tasty and not so strong as I expected, regardless of the aged, still smooth but at the end the extraordinary Gruyere flavor!

Le Gruyere
We tried this variety along with other cheeses blended into a fondue. No doubt this is a great cheese. In switzerland it can only be found in specialty cheese shops vs supermarkets. The problem we had is that both pieces of one lb we received under vacuum weighed just under 1lb. The effective weight was 421gramms including the plastic vacuum bag. Since the skin on Gruyere is not edible and must be removed, be prepared to lose 3 ounces total off your lb of cheese.

A Fantastic Gruyere
As the daughter of a former Swiss Cheese maker,our family enjoys a really well aged Gruyere, and my dad always gives his approval. It's a wonderful treat for the holidays!
