This certified-organic pearled wheat grain comes from Italy, specifically the Mugello region of Tuscany. Farro, also known as Emmer Wheat, is the world's original grain from which all others derive, including rice, barley, wheat and rye. Because it is hard to grow, farro almost became extinct after World War II. However, it is now making a big comeback, especially in Italy, where the top restaurants feature it in soups and side dishes. It has a pleasant nuttiness and a hearty texture. Naturally high in fiber, protein, and B-vitamins, it is also very low in gluten, which is good for those who have an allergy. Farro grains look like brown short-grain rice, but each grain retains a firm, chewy texture even after cooking.

Organic Pearled Farro
This Farro is awesome. Make sure you soak it overnight. It doesn't take that long to cook and once it's done, you can just sit down and enjoy it to the fullest. Great product. I love it!

Organiz Farro
Loved the taste. Was much tastier than barley - which it is usually compared. Did not have to presoak. Cooked in about 20 minutes - versus the usual 60 minutes for barley.

pleasantly surprised
Tetxure is great, especially since you can cook it how you want it (firm, mushy, it's up to you and your preference). I like it firm in a soup or in place of rice in a dish. Haven't tried it in a salad yet. I will keep checking other recipes for more uses. It's good and it's versatile.

Perfect for soups and salads
We did a bike trip to the Umbria region of Italy last fall and had a delicious salad of farro, tomatoes, and basil one day for lunch. When we got back to the US, the only place I could find farro was at igourmet. Alice Water's cookbook - The Art of Simple Food - has a recipe for Farro salad similar to what we had in Italy. My favorite way to eat Farro is in soup, especially the Farro and Bean Minestrone soup from the Silver Spoon Italian cookbook; everyone loves this recipe.
