This county is the heart of horse country and a center for outdoor activity, including pony rides, treks on horseback, fishing, riding, and bird watching. The folks in Tipperary enjoy the good things in life, including their cheese. Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike inferior blues, is not too salty. It is a fabulous alternative to Gorgonzola or Stilton.

Repeat purchase
A few years ago, a family member sent us our first piece of Cashel Blue. My goodness, it was good! I failed to find any locally, and finally found that igourmet had it in pieces and in the 3 pound whole wheel. I ordered the wheel, and had no regrets. There was enough to share with my best friend, and have some tete a tete cheese/wine/cracker parties just my husband and myself, overlooking our garden. This year, I bought another wheel, and don't you know the family member gave us a piece of it in the iGourmet assortment which arrived Monday before Christmas? So it will be a Cashel Blue New Year around here! If you're Irish, you simply must try it.

Cashel Blue perfect gentle cheese
Last year we were gifted with an assortment of Irish cheeses from igourmet. The gift included Cashel Blue. My Irish husband loved it. I purchased a whole wheel last December since the smaller portion did not last very long. The description given with the whole wheel describes our experience with the tasty cheese. Mild but distinctive, quite easy on the palate. We'll be back for another wheel later this year. It is now a favorite treat.
