The first wheels of Morbier ever produced were made from milk leftover from Gruyere de Comte production. The cheesemaker would press the leftover curd from the evening production of Comte into a mold and cover it with a thin layer of ash to prevent it from both drying out and attracting flies. The next day, he would add the leftover morning curd on top of the ash. The result is a two-layered semi-soft cheese with a complex fruity flavor and a slight tang. The two layers of the cheese have slightly different flavors, with the layer from the evening milking tasting fruitier than that from the morning milking. The ash not only separates the two layers of the cheese; it also serves an aesthetic purpose as it makes a dramatic presentation.
Morbier is made using raw cow's milk and has a complex, bold flavor. Its yellow-ivory interior has a smooth texture, wrapped inside a creamy-brown crust. This cheese pairs well with French Saucisson or is great on a sandwich made with a crusty bread. It also melts beautifully.

  • Made from unpasteurized cow's milk.
  • Photo depicts whole 12 lb. form of cheese.

Cheese for Grownups
Too much is made of the odor of this cheese. I know and like it, but was afraid it would fall short of the unpasteurized versions I have had in the past, when the dark vein was reportedly real ash. It was just delicious though, perhaps the best yet. I will be back for it and recommend it highly to other adult cheese lovers.

Aromatic, Creamy
A very nice cheese. Somewhat spongy consistency. A bit smelly and the smell penetrates the fridge, so keep it in an air tight bag. I had it before and bought it again - no regrets, but don''t buy if strong flavors do not suit your palate.

Experience the two layers
Thi is a cheese with personality. Used it as part of an array for a raclette night. It was highly acclaimed

Unpleasant
This is a stinky cheese, which I can usually handle. But its taste is even worse than its aroma. The family all concurred. Consequently, it went in the trash.

Intimidating For Newbies But Delicious
This is one of those cheeses that turns my Raclette Party guests' noses but if you can get them to try it melted, it's a winner! It's even a better melter than raclette! The creamy texture is like a warm brie but the Morbier can take the high heat of the grill. Again, the cheese does announce it's presence with a strong odor but if you can get around it, it's well worth it!

What is life without Morbier!
igourmet by far has managed the fine note of a Morbier. It comes closest to any original Morbier.
