This cheese has a slightly misleading name as it has nothing to do with the county of Shropshire. In fact, it originated in Scotland in the 1970s before its production was transferred to Leicestershire.

Made in a similar way to Stilton, it is a soft cheese with a sharp, strong flavor that takes between six to eight weeks to mature. Orange in color with blue veining, it enjoys a slightly tangy aroma.

A delicious accompaniment to Shropshire Blue worth trying is a simple cup of tea - making it ideal for an afternoon or early evening snack.

Somewhat Disatisfied
What I wanted was a half wheel of a white Cheshire Stilton. Could not find it on your site even though I've purchased it before. The blue shropshire you sent isn't bad, but not exactly what I wanted.

Stuart Blue a.k.a. Shropshire Blue
Excellent, well matured, packed and shipped. A little expensive for a Scot, but a must for a Burns Supper. Take my tip and market this cheese as "Stuart Blue" for Burns Nicht. Yours aye. Richard

a nice blue, beautiful consistency, superb
this is the best most consistent blue on the market. a whole wheel is never enough, great full flavor, beautiful color, highly reccommended to remove all wax before oppening.
