Speck is a type of bacon from the South Tyrol region of Italy. Made by Recla, a well respected producer since 1919, this meat is rubbed with a mix of spices that is a well-kept family secret. Basically it is a mix of rock salt, sea salt, pickling salt, pepper, juniper berries, various herbs, and a hint of allspice. Two weeks of dry curing is the first stage in preserving the meat. The speck is then lightly cold-smoked over beechwood chips, producing its signature flavor. The individual pieces of speck are then stacked carefully for maturing in aging cellars, where the product loses about 40% of its weight in the slow drying process. This maturing is important for the bacon to become truly tender. Unlike American bacon, this type of bacon does not require any additional cooking - simply bring it to room temperature and slice it. Serve it with or without its spicy crust.

Every tiny speck
We use it not only as cold cuts with bread so that neither the smallest part is going to be wasted. Add to "canederli" (dumplings with stale bread) for a tasting soup with broth or to a soup with fennels, potatoes, leek, olive oil, salt.

Alpine treat
I ordered speck to make a Swiss onion tart with this traditional ingredient. When the tart was first served, you could taste the smoky flavor but not the spices. When the tart was rewarmed the next day, there was more spice flavor. I would definitely purchase again for its unique flavor, although cubes of Canadian bacon can be substituted.

Wonderful product. The speck is infused with delicate blend of spices leave just a hint of spice in whatever dish you're preparing. The rind is perfect for cripy cracklin' bits.

Alto Aldige Speck
The Speck is excellent. A little different from the North Tyrol Region Speck but very tasty. I will order it again. The service is great as well.

A Taste of Europe
I like it with bitter greens, dandelion or chicory sauteed with garlic toasted pine nuts and olive oil. Great with lentils or as a base with risotto. Fried out, a great addition to pizza, salads or whatever. Happy to find it for sale!

This stuff is gold
I've added Speck to all kinds of things -- eggs, cornbread, lentils, potatoes, grilled cheese, mac and cheese, oatmeal, and on and on. It's like a nugget of gold in my refrigerator that I can "chip" into whenever I want to add a little kick to whatever I'm fixing. And it doesn't need any more cooking, so it's good cold as well as hot.
