Located in County Limerick and recognized as the originator of fine Irish cheese, Marion Cahill of Cahill's Farm has developed an interesting range of flavored cheddars. Using a base of tangy Irish cheddar, she has experimented with a variety of flavors and has come up with some very popular combinations.

We offer three types of Cahill's Farm Cheddar. Varieties sold separately.:

  • Porter: This brown waxed gourmet cheese truckle is the original and definitive Irish Plain Porter Cheese. Each brown waxed truckle is individually handcrafted with plain Irish porter. This cheese is perfect as an hors d’oeuvre when sliced and served with a tossed salad. It is equally as good when served as a centerpiece on an after dinner cheese board.
  • Whiskey: This yellow waxed gourmet cheese truckle is hand made using Kilbeggan Irish Whiskey, then matured into a tantalizingly delicious aperitif. This is a traditional Irish monastic Cheese reputedly brought by the Irish Monks to Scotland. It is a simple vintage cheddar entwined with Kilbeggan Irish Whiskey to give a fabulous savory combination. It was originally created for festive occasions such as Harvest or Christmas, but today it can be enjoyed all year round.
  • Ardagh Cheddar with Red Wine: Named after the Smith O’Brien home of Cahermoyle, Ardagh, where this medieval monastic cheese was revived about a hundred years ago. This is an adventurous red waxed cheese, veined with red wine, was revived from an old Limerick Palatine Recipe. It has a sharp taste with a strong presence of dry red wine. Enjoyed best on crackers or crisp-bread with a glass of vintage port.

  • These semi-soft cheddars are made from pasteurized cow's milk and vegetable rennet.
  • Whole form of cheese is 5 lbs. We cut and wrap this item by hand.

Combination of flavors add something extra
I found the combination of of cheddar & Elderberry Wine to complaint one another nether overpowering thus adding a sweet but sharp flavor to the cheese. I found this an excellent snacking cheese while watching TV or just relaxing.

party favorite
Had a party and served this delightful cheese among 7 others. This was to be gobbled up. Definitely a must for any get together. Delicious to the tongue and intriguing to the eye!

Elderberry Wine variety: delicate appearance and taste
Cahill's Farm Elderberry Wine Cheddar was another of the more popular items on the "alcohol themed" cheese trays I put together over the holidays. People seemed to enjoy the delicate pink and orange lace appearane of the cheese as well as it's equally delicate fruity flavor. Personally, I couldn't detect much wine flavor to the cheese but rather more of a fresh berry taste, but oh so subtle. One reviewer here at igourmet commented that the cheese is mild enough it can easily get lost among stronger cheeses in an assortment, and yes, I could see that easily happening. Luckily, at the parties I attended, most guests tended to try the Eldeberry Wine Cheddar early on, perhaps simply because the cheese's colorful appearance is so inviting. Porter variety makes quite an impression visually
For a couple of holiday parties I attended, I put together cheese trays consisting of all alcohol infused cheeses like Drunken Goat, Kerrygold with Stout, and ten or so others. The one selection on the trays that immediately got the most comments was Cahill's Farm Porter Cheddar with it's deep brown color, looking more like a block of chocolate than a cheese. I'm happy to say the guests were equally pleased with the taste of the cheese, and so was I. Though it looks like the cheese must have been completely saturated in porter, the taste isn't at all overwhelming. You can just barely pick up hints of chocolate, caramel, or coffee from the porter, while leaving plenty of room for the slightly sharp cheddar taste. A fellow reviewer who goes by the name "revisann" described the flavor combination as "almost mushroom-like," a very astute observation that I hadn't noticed at first. If you're looking for something really different to add to your next cheese tray, you can't go wrong with Porter Cheddar. By the way, I'll also be submitting a review of Cahill's Farm Eldeberry Wine Cheddar, which I also tried.

Irish Whiskey and Porter both very delicious
I ordered the Irish Whiskey and the Porter and was not disappointed by either one. These are great additions to party cheese boards.

Porter Cheddar
After having a taste of the Porter-Cheddar cheese, I had to have some for my bunco party AND another social gathering. One of my guests immediately ordered the same cheese for her upcoming party. I am addicted.
