To be frank, this is real provolone. Deli provolone never sees the love and attention that Luigi Guffanti shows his cheese. Aged for two to three years, each 44 lb mandarone ("large tangerine," referring to the cannonball shape) of cheese is carefully inspected, brushed, and graded until it meets the high standards that the Guffanti family has been ensuring since 1876. With that in mind, don't treat this like deli provolone. Shave it thin, serve it at room temperature, and break out a good bottle of red wine. Some nice prosciutto and salami wouldn't be a bad idea, either. If you've been looking for a real, sharp provolone, this is your cheese.

When great-grandfather Luigi Guffanti, in 1876, began to age Gorgonzola cheese, his brilliant intuition was to purchase an abandoned silver mine in Valganna, in the Varese province. In the mine, with its temperature and humidity constant year-round, the cheese matured so well that Luigi quickly cornered the markets: his sons, Carlo and Mario, at the beginning of the 1900's, exported as far as Argentina and California, lands of Piedmont and Lombard emigration. Maximum attention to the handcrafted quality of the cheeses and passionate care taken in the refinement process mark the proud Guffanti-Fiori family tradition that has been handed down for five generations.

One of My Favorite Cheeses & My Dads Too!
If this cheese was in any common grocery store all other cheeses would be sitting on the shelves. This is a delicacy and real cheese, by comparison cheese found in most (not all) stores across the U.S.A. have lost their ability to keep up with the traditional old world style cheeses. They just don''t make them like they use to anymore, but they do here! A true blast from the past may we always have this type of food available to us. Not only is it the best tasting, organic, but the key being RAW (unpasteurized). Anything that is pasteurized is heated to "prevent food poisoning" and in doing so destroys many vital nutrients and resources. Even in regular milk, calcium is usually added back into the milk because the Vitamin D (calcium) is destroyed during pasteurization.) Sadly it is said the inventor of pasteurization said on his death bed his method of pasteurizing was very bad. Your body has to work harder getting rid of inert or dead substances, and the structure of the cheese changes as well. It''s of course possible to get food poisoning from anything, and this is something to consider, however, foods are cooked to such a degree (Take Out & Restaurants), you will always be getting not just half of the product you originally planned to buy but also something that has a toxic agent or equivalent that cannot be utilized and is harder to digest then any raw product. There is a Raw Foods diet, and it specifies anything cooked above 106 degree C breaks down your food while making the vital nutrients inert and the only thing that remains, is the texture and taste. I try my best to order from this site at least once per year and will be ordering more very soon. If you are a cheese lover of Provolone in hot Italian bread, this cheese is for you.

Not what I was expecting. Too sharp and better served as a grated cheese.
This may be "real" provolone, but it tastes nothing like the provolone I am used to. It's much more like a very sharp Parmagiana cheese that you would grate. I am not saying anything about its quality. The cheese is good, just not what I was expecting or hoping for.

This is provolone
Simply said, this is the best provolone your money can buy. Open up a box of Grissini or a fresh italian bread, a bottle of your favorite Italian Red Wine, put this chesse on a cutting board and enjoy life at its fullest
