This is a full-bodied cheese with a nutty flavor and smooth texture. The cheese is hand rubbed with a unique blend of espresso and lavender that infuses the cheese with an inviting aroma and taste. Espresso is ground fresh with French Superior Lavender buds and imparts notes of butterscotch and caramel, which are prevalent near the rind, but find their way to the center of the cheese. The cheese is aged on Utah Blue Spruce aging racks in Beehive Cheese Co's humidity controlled caves during the six to eight month aging process to develop texture and flavor. Enjoy the Barely Buzzed cheese grated over pasta or melted atop a savory vegetable tart.

When you take a bite of Beehive Cheese, it melts like butter in your mouth- that's because it's made from some of the creamiest and cleanest milk in Utah, lovingly crafted into specialty cheese by a family who shares a passion for the artisan way of life. In 2005, brothers-in-law Tim Welsh and Pat Ford left the fast-paced world of software and real estate seeking a more simple way of life as artisan cheese makers. They traded in their grinding traffic commute for quiet mornings sitting with 500 gallons of farm-fresh milk. They gave up briefcases and laptops for the romance of making hand-crafted cheese: hours spent mixing and warming milk, feeling it thicken and envelope the room with the sweet smell of custard. Days spent following natural rhythms: waking before dawn to welcome new milk and feeling the tired ache of sore muscles at day's end and months waiting with an artisan's patience for their cheeses to ripen to perfection.

Strange and delectable combination.
I do not drink coffee so purchasing this was truly taking a risk on my part. But the choice was exquisite. The coffee taste is distinct but makes a real noticeable entrance with the cheese.

Great Cheese

Do you take cream, sugar, or cheese with that?
Yes, you can actually taste the coffee in this cheese, and it's not just a subtle whisper but a fairly full, rich flavor. The beans are rubbed on the surface of the cheese forming an edible rind, which is where the flavor is most concentrated, of course, but the taste manages to permeate all the way to the center of the cheese. I couldn't single out the taste of the lavender buds but presumably they contribute their own little touch to the distinctive combination. The cheese itself is very delicate and somewhat soft, a nice base for the coffee bean taste. Quite simply, if you're a coffee lover, you'll love this cheese.

My new favorite
So awesome! Its firm and nutty, kind of like a Parmesan, but the coffee adds a such a great distinct flavor

Hint of Coffee
I got this cheese along with several others as a gift. This cheese mostly lives up to its description. The rind fun and notably covered in coffee grounds. The cheese is semi-firm and easy to cut. It's great for snacking, too. Because of the flavor, I don't seem much use besides just on a cheese platter. I give it a 4/5 because I was hoping it would be even stronger in coffee flavor. Instead, it's subtle but noticable.

Loved the Buzz!
This cheese had a great mild flavor but the coffee & lavender rub made gave it a very different and notable taste that was enjoyed by all! Will order this again-as will several friends that tried it!

This cheese is a wonderful surprise of flavors that all my friends really enjoyed when served on my cheeseboard this week! Very subtle, not complicated or strong. Recommended to my friends for something new.
