2 lb large carrots
2 Tbsp toasted almonds
1 Tbsp dried cherries
2 scallions, green parts diced
2 Tbsp cilantro, roughly chopped

Ginger-Sour Cherry Dressing
2 Tbsp Dalmatia Sour Cherry Spread
1 tsp Dijon mustard
1/2 tsp fresh ginger, grated
1 ½ Tbsp white wine vinegar
2 Tbsp extra virgin olive oil
Salt and fresh cracked pepper
In a medium bowl whisk together Dalmatia Sour Cherry Spread, ginger, Dijon, and white wine vinegar. Slowly add the olive oil while continuing to whisk. Whisk well until all ingredients are incorporated. Season with salt and pepper.
Using a vegetable peeler, shave carrots into ribbons by peeling down one side at a time. Toss carrots with almonds, cherries, and scallions, and cilantro. Add dressing and coat well, season with salt and pepper as desired. Serve chilled.
