Ponti carefully marries high quality wine vinegar with precious cooked grape musts from 7 local grape varieties. The blend is then aged in oak, cherry and chestnut barriques over a long slow period for a product with exceptional bouquet and flavor.
Ponti Aceto Balsamico di Modena P.G.I. (IGP) is made in their vinegar cellar in Vignola, at the foot of the Modena hills, using must content, maturation time and minimum density, which exceed those set by the Specifications.
