Pane Guttiau, also known as Pane di Musica, is a traditional Sardinian flatbread. It is a golden, feather-light flatbread made with semolina. Its thin and crispy texture is one of its defining characteristics, reminiscent of paper thin sheets of music. Pane di Musica has a lovely toasty flavor, the addition of olive oil adds a subtle fruity note and salt provides a savory touch. Pane di Musica is typically enjoyed as a savory cracker and pairs well with olives, cheese, and charcuterie.
This style of flatbread has ancient origins and holds a significant place in Sardinian culinary history. It has been a specialty of the region for thousands of years. Traditionally, it served as a staple for shepherds who required a long-lasting, shelf-stable bread to sustain them during the winter months and transhumance, the seasonal movement of livestock.
