Manchego is a DOP cheese that can be made only from the milk of Manchega-breed sheep. In order to comply with DOP law, the sheep must graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo. These are the provinces of the famous La Mancha region.

The best Manchego cheese is produced when the milk is the richest. For Manchego, this occurs between the months of August and December. This Artisan Manchego is only produced during those months, while less aged cheeses are made during other times of the year.

The pattern on its rind honors a time when the cheese was wrapped in sheets of woven esparto grass. Made by the Corcuera Family, this excellent Manchego cheese is produced exclusively from raw milk and aged for a minimum of 8 months. The buttery qualities in the cheese come from the cheesemaker's talent and the beautiful terroir of the Toledo region. Enjoy it as the locals do, drizzled with honey.

Excellent sheep cheese
I''m a bit of a sheep cheese connoisseur, and this one does not disappoint. The flavor has the familiar bite of sheep milk but has been mellowed by age, and the cheese is firm and so satisfying to bite into. I''ve been thoroughly enjoying mine with orange marmalade.

La Mancha originated cheese is deserving of praise by Cerevantes for the knight errant. Dulcinea would have served it to her admirer to keep his attentions.

It must have been good!!!
Bought three cheeses from igourmet and put them out at a party with the tasting information. I put a jar of quince paste out with this manchego. Went to taste some and it was ALL it had to be good. I will have to re-order so I can attest to it myself!

A solid Manchego
This is a good manchego, to be sure! It has a piquance, but it is not overwhelming. There is blend of aged cheese, with the earthiness that a Manchego brings, but countered by the slight saltiness. I agree with the description. A little touch of honey really brings this cheese to life!

Notable, strong taste, probably for a real cheese lover. Must be experienced and open. Use in mixing cheeses for cooking.

A true taste of Spain
We had Manchego in Valencia and fell in love. This cheese is just as we remembered it. Best in thin small slices with fresh fruit, baquette slices, honey or dark Spanish chocolate. Great cheese to nibble. Ole!

One tasty cheese!
Excellent Manchego ! This is soooo much better that what you can pick up in dairy case. The aging process really gives this cheese a wonderful flavor. I'd suggest this, along with the quince paste, as part of any cheese presentation.

Not What I Had Hoped
I found this cheese to be extraordinarily dry...much dryer than any Manchego that I have ever tried. It does not work for me in a sandwich and does not melt well on foods. I found it to be more reminiscent of an Italian hard cheese such as Romano. It might be good grated on pasta. Other than as an hors d'oeuvre, I see little use for this cheese.
